Barbecued Beef Brisket

Ingredients:

bulletGarlic
bullet1 onion
bulletSavory salt
bulletLiquid smoke
bulletSalt and pepper
bullet2 lemons - sliced
bulletBeef brisket

Directions: Cover brisket with garlic, onion, savory salt, liquid smoke, salt and pepper. Wrap tightly in aluminum foil. Bake two hours at 300 degrees. Remove foil and cover with slices of lemon and onion. Place under broiler for 10 minutes. Cover with BBQ sauce (see below) and return the brisket to the oven (at 300 degrees) for an additional 45 minutes.

Garlic Sauce:

bullet

1 chopped onion

bullet1/2 t celery salt
bullet1 clove garlic
bullet1/2 t dried mustard
bullet1 slice lemon
bullet1 T Worcestershire sauce
bullet1 t salt
bullet1/4 cup brown sugar
bullet1 t pepper
bullet1/4 cup vinegar
bullet1/2 t chili powder
bullet1 cup tomato puree
bullet1/8 t Tabasco sauce
bullet1 cup tomato sauce

Directions: Mix all these ingredients together and bring to a boil.

Calico Beans

Ingredients:

bullet1 can kidney beans - undrained
bullet1 can lima beans - drained
bullet1 can Big John's Beans 'N Fixin's
bullet1 medium onion - chopped
bullet1/2 cup brown sugar
bullet1 T chili powder
bullet3 slices of bacon, cut bite size
bulletOptional: chopped green and red pepper, celery, parsley

Directions: Mix in order given and top with uncooked bacon. Bake for 60 minutes at 375 degrees.

Broccoli Cornbread

Ingredients:

bullet1/2 cup butter, melted
bullet1/3 cup chopped onion
bullet1 t salt
bullet3/4 cup cottage cheese
bullet10-oz/ pkg. chopped broccoli, thawed and drained
bullet4 eggs, beaten
bullet8 1/2-oz. pkg. corn muffin mix

Directions: Combine first 6 ingredients. Stir in muffin mix. Pour in greased 13x9x2-inch dish and bake in 400-degree oven for 20 to 25 minutes. (I melt the butter in the baking dish to grease the pan.)

Parmesan Potatoes

Ingredients:

bullet6 jumbo russet potatoes
bullet6 T butter
bullet1/3 cup grated Parmesan cheese
bullet1/3 cup all-purpose flour
bullet1/2 t salt
bullet1/2 t pepper
bullet1/2 t paprika

Preheat oven to 375 degrees. Scrub and peel potatoes. Cut potatoes in quarters lengthwise and place in cold water. Melt butter in a 13x9x2-inch baking dish or pan. Combine Parmesan cheese, flour, salt, pepper, and paprika in a bag. Shake moistened potatoes, 3 pieces  at a time, in a bag with coating mixture and place in single layer in baking dish. Bake at 375 degrees for 1 hour, turning once during baking. (Yield: 8 servings.)

Old-Fashioned Chocolate Cake

 Ingredients:

bullet1 1/2 sticks butter, softened
bullet2 eggs
bullet1 t vanilla
bullet1 t salt
bullet1 1/2 t baking soda
bullet1 cup water
bullet2 cups all-purpose flour
bullet2/3 cup cocoa

Directions: Preheat oven to 350 degrees, grease and flour 2 layer-cake pans. Beat sugar, butter, eggs and vanilla until light and fluffy. Add water, flour, cocoa, baking soda and salt. Beat until smooth. Bake at 350 degrees for 28-33 minutes.
